Smoked Salmon Soup

2 Tbs butter
2 medium onions chopped
1 green pepper chopped
1 large garlic clove minced
2 cans stewed tomatoes
12 oz chopped Smoked Salmon
2 Tbs mince parsley
1 bay leaf
1/2 tsp thyme
1 Tbs Worcestershire
1/4 tsp. liquid hot pepper
2 Tbs lemon juice
1/2 cup red wine
1/2 cup chicken broth

Melt butter in a large pan. Add onions, green pepper and garlic. Cook until tender. Add tomatoes, wine and broth. Add chopped Smoked Salmon to soup with remaining ingredients except lemon juice. Cover and simmer 15 minutes. Stir in lemon juice, salt and pepper. Serves four.

Smoked Salmon Cornets

2 lbs Smoked Salmon
1 1/2 cups heavy cream
Salmon Roe
Fresh Chives

Slice Smoked Salmon into 24 three inch squares. Roll Smoked Salmon into a hollow cone. Whip cream and stuff cone with about 2 tablespoons of whipped cream. Top cornets with Salmon Roe and garnish with Fresh chives. Serves Six.

Smoked Salmon Chowder

3 Tbs butter
1 small onion minced
1 large celery stalk, minced
1 large potatoe cut into 1-inch cubes
2 tablespoons of flour
1 cup fish stock or chicken stock
1 cup of water
3 fresh parsley sprigs
1 bay leaf
1/2 Tbs thyme
8 oz Smoked Salmon
1 cup milk
1/2 cup whipping cream
Fresh ground pepper
Snipped fresh chives
White horseradish

Melt butter. Add onion and celery. Cook 10 mins. Add potato cubes and cook for about 3 mins. Sprinkle mixture with flour and stir. Blend broth, water and spices. Bring to a boil, when potatoes are tender, add Smoked Salmon, milk and cream until it’s hot. Discard bay leaf and parsley sprigs. Sprinkle with Chives, black pepper and horseradish to taste. Serves 6.

Smoked Salmon Pizza

6 oz Smoked Salmon
4 oz cream cheese at room temperature
1 tsp. dill
1 large pizza dough
1/2 cup sliced green onion
1 hard cooked egg sliced
Blend cream cheese and dill well. Spread on pizza dough. Top with Salmon and green onions. Broil until hot (5 inches from heat), Garnish with egg. Serves 2.

Smoked Salmon and Avocado Salad

1 large avocado
3 oz Smoked Salmon
8 oz unflavored yogurt
1 lemon

Halve the avocado, remove seed and pile salmon into each avocado half. Spoon yogurt over the top and squeeze lemon juice.

Smoked Salmon Cheesy Pasta

1 stick butter
4 Tbs flour
2 1/2 cups milk
Pinch of nutmeg
2 oz cognac
12 oz angel hair pasta cooked and drained
6 oz Smoked Salmon
2/3 cup Gruyere cheese
2/3 cup Parmesan cheese

Cook over low heat 4 Tbs butter and flour. Add milk and stir constantly. Add nutmeg, cognac, salt and pepper.
Mixed pasta with rest of butter. Layer 1/3 of pasta in buttered baking dish, 1/2 of Smoked Salmon and 1/3 of cheese. Pour thin layer of sauce over cheese. Repeat. Cover with 1/3 pasta and cheese.
Bake in 350 for 20 minutes or until top is golden. Serves 6

Smoked Salmon and Egg Salad

2 hard cooked eggs, chilled
3 oz washed watercress
6 oz Smoked Salmon
1/3 lemon juice
1/4 tsp dill
1/4 tsp dry mustard
1/4 tsp sugar
Dash pepper
1 Tbs drained capers

Arrange watercress in 4 salad plates. Divide Smoke Salmon into 4 portions, and arrange on watercress. Peel eggs and cut half lengthwise. Place 1/2 egg on each plate next to the Smoked Salmon. Mix rest of ingredients until well blended. Pour over salad. Serves
